Dark Chocolate Cherry Chews

Introduction

This is a fabulously versatile recipe, this version tastes just like a cherry ripe bar, very irrisitable.

Ingredients

Serves: makes about 4 dozen.

  • 2½ cups all-purpose flour
  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup brown sugar
  • ¾ cup granulated sugar
  • 9 ounces unsalted butter
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 1 cup candied cherries
  • 1 cup bittersweet chocolate

  • Preheat oven to 180oc
  • In a medium bowl, whisk together flour, soda and salt and set aside.
  • Using an electric hand mixer or stand mixer, cream together the butter and sugars, for about 3 to 4 minutes. Add the eggs, one at a time, blending well after each one. Blend in vanilla and almond extracts. Add the flour mixture, a little at a time, until its all incorporated. By hand, stir in the cherries and chocolate pieces.
  • Drop by tablespoonfuls onto baking paper lined tray, space at least 2 inches apart
  • Bake in a preheated 180oc oven for 10-14 minutes or until edges are starting to brown. Let cool on tray for ten minutes then move to wire racks to cool completely.

    Alternatives - Dried strawberries and milk chocolate Dried apricots and white chocolate Peanuts and milk chocolate Walnuts and white chocolate Really you can use any 2cups of flavouring you could imagine. I often split the recipe into 2 bowls and make 2 different flavors. The Dried Strawberry and Milk Chocolate variation is my favourite, but boys and men seem to prefer the original version.
