Ingredients

Serves: 8-10

Metric Cups
  • 1 packet pain de mie
  • 100 grams butter (soft)
  • 188 millilitres semolina
  • 750 millilitres milk
  • 300 grams mozzarella
  • 125 millilitres coffee
  • rosewater
  • 500 millilitres sugar
  • 250 millilitres water
  • 2 tablespoons lemon juice
  • 2 tablespoons rosewater
  • 1 packet pain de mie
  • 4 ounces butter (soft)
  • 6⅗ fluid ounces semolina
  • 26⅓ fluid ounces milk
  • 11 ounces mozzarella
  • 4⅖ fluid ounces coffee
  • rosewater
  • 17½ fluid ounces sugar
  • 8⅘ fluid ounces water
  • 2 tablespoons lemon juice
  • 2 tablespoons rosewater

Method

  • Process the pain de mie then add the butter and mix well. Spread on a 30cm round tray and bake till it becomes brown in color.
  • Meanwhile in a marmite cook the semolina and milk till boiling. Remove from heat then add the mozarrella and continue stirring.
  • Pour over the bread and bake for 15mn in the oven.
  • Turn the tray upside down and serve warm with the katr.
  • Katr: combine sugar and water in a pan and stir till boiling. Stop stirring and leave to boil for 10mins.
  • Add the lemon and keep boiling for 5 more mins. When cold add the rose water.
