Process the pain de mie then add the butter and mix well. Spread on a 30cm round tray and bake till it becomes brown in color. Meanwhile in a marmite cook the semolina and milk till boiling. Remove from heat then add the mozarrella and continue stirring. Pour over the bread and bake for 15mn in the oven. Turn the tray upside down and serve warm with the katr. Katr: combine sugar and water in a pan and stir till boiling. Stop stirring and leave to boil for 10mins. Add the lemon and keep boiling for 5 more mins. When cold add the rose water.
