Pasta With Ricotta and Smoked Salmon

Cook the pasta as per packet instructions. Put ricotta into smallish bowl and add about 1tb of the pasta cooking water and beat together to loosen, you want this to be a loose creamy consistency so go easy with the water and add as much as you feel you need. Drain off pasta and return to pan (or warmed serving bowl), add the ricotta sauce and stir well, add the smoked salmon and stir through the pasta. Taste and adjust seasoning if necessary. You could snip over some fresh dill fronds if you wanted to, or some parsley, but in its virgin state it is pretty good.
