In a large bowl, mix all ingredients together until nicely mashed and blended. Serve in a beautiful crystal container and smooth out the surface with the back of a spoon. Serve over a large layer of lettuce leaves on chilled ice. Next to the Salad Olivieh, arrange platters or baskets of bread slices for sandwiching; I suggest crusty French sour dough or large pita.
Introduction
It's a huge crowd pleaser and a great filling to sandwiches.

Ingredients
Serves: 16-20
- 8 large baking potatoes
- 16 ounces peas (sweet, drained)
- 8 ounces persian pickles (or small sandwich pickles, diced)
- salt (to taste)
- pepper (to taste)
- 2 teaspoons lime juice (use bottled lime juice or squeeze fresh limes)
- 6 tablespoons mayonnaise
