Blender Banana and Apple Cake

Preheat the oven to 220°C/400ºF and get out a 25cm / 10 inch square tin and line it, or (as I prefer) a throwaway foil baking tray measuring 30cm x 20cm x 15cm / 12 x 8 x 6 inches. Pour the vegetable oil, the eggs, granulated sugar, cinnamon powder, and the peel of the apples in a blender and mix it for about 30 seconds or a little longer. Transfer the mix to a bowl and slowly add the flour, stirring it gently till it is even - you can add the oat if you want to in this step. Add the apples, the bananas and the raisins and dried apricots (or whichever dried friut available at your storage) and stir it. In the end add the baking powder. Transfer it to the baking tray and put it in the oven to bake for about 35 / 40 minutes.

This is a perfect cake when you don't want to waste too much time in the kitchen or you have your mixer broken, as well as you have a chance to use your blender in order to cook this gorgeous cake, ideal for breakfast or meetings having some tea or coffee together.

- 3 eggs
- 2 cups granulated sugar

- 3 bananas (mashed)
- 2 cups flour
- 1 tablespoon baking powder
- ½ cup raisins
- ½ cup dried apricots
- 1 cup oats (optional)
- 3 peeled apples (chopped, keep the peels)
