Just made this for lunch and it is yummy - quite refreshing As I was just throwing things in as I went along, there are no measures, so feel free to use as much or as little as your like to suit your own taste

Ingredients

Serves: 1

Metric Cups
  • cooked rice
  • tomatoes (diced)
  • Lebanese cucumbers (deseeded)
  • carrots (diced)
  • pinenuts (toasted)
  • 1 medium orange
  • currants
  • fresh coriander
  • rocket
  • orange juice
  • balsamic vinegar (caramilized)

  • arugula

Method

  • Cook the brown rice to your liking
  • Add the carrots, cucumber, tomato, pine nuts, Coriander & Rocket Leaves - toss to combine.
  • Pour in some orange juice (the amount will vary depending on how much rice you used), then add a squirt of Caramelized Balsamic Vinegar.
  • Chop the orange into chunks and toss this through the salad. Put a spoon in and enjoy the first mouthful
