Fruity Brown Rice Salad

Cook the brown rice to your liking Add the carrots, cucumber, tomato, pine nuts, Coriander & Rocket Leaves - toss to combine. Pour in some orange juice (the amount will vary depending on how much rice you used), then add a squirt of Caramelized Balsamic Vinegar. Chop the orange into chunks and toss this through the salad. Put a spoon in and enjoy the first mouthful

Just made this for lunch and it is yummy - quite refreshing As I was just throwing things in as I went along, there are no measures, so feel free to use as much or as little as your like to suit your own taste
