This is a recipe I found in a Hungarian cook book with 100 recipes on how to prepare poultry. Delicious, I've made it number of times, ideal for the guests you don't know when will arrive

Ingredients

Serves: 3-4 persons, depending on the

Metric Cups
  • 4 chicken thighs
  • 1 tin chopped tomatoes
  • 100 grams smokey bacon (or pancetta)
  • 5 cloves garlic

  • 3½ ounces smokey bacon (or pancetta)

Method

  • Season the thighs with S 'n' P. You can remove the skin, so it won't be too greasy
  • In an heat proof casserole (I have a teracotta one, but it looks better in a glass one) put the slices of bacon, thighs, pore the tomatoes over and put the garlic cloves between the meat.
  • Cover with aluminium foil and bake in the oven for cca 45min at 200 dgr. When it's almost done, remove the foil to loose the extra liquid.
  • Serve with boiled rice (even the leftover from Chinese take-away).

    You can also add some tomato paste, or tomato juice, works just as well. Add some sugar to your liking, if you prefer the tomato not to taste sour. It's practically no work and is really delicious, its' simplicity a side.
