Roast Chicken D-Lite

Clean and pat dry chicken pieces. Place in a medium to large rectangular baking dish with all of the ingredients. Combine everything together, massaging the chicken pieces (and the potatoes and mushrooms) with the nice herbs and spices. Arrange the chicken pieces on top of the potatoes and mushrooms scattered in the bottom of the pan like a rack, and then bake your whole creation for 45 minutes to an hour at 180 degrees Celsius. Baste the chicken pieces with the drippings regularly during the cooking process to prevent them from drying out. And just before serving, carefully bathe the cooked chicken pieces with the same lovely drippings. Scatter sliced lemon pieces on top and rain down some 1 - 2 inch cut chives. Enjoy.

- chicken legs
- 1 lemon (juice and rind of)
- 1 bay leaf
- extra virgin olive oil
- chicken seasoning (or a mixture of sweet paprika powder and chopped thyme and rosemary)
- potatoes (marble, whole)
- button mushrooms (whole)
- salt
- pepper
For the Garnish
- lemons (sliced)
- chives
