Sieve flour into a bowl and rub the butter into the flour until you have a breadcrumb texture. Use a knife and stir the sugar, egg yolk, orange zest, juices and apple zest into the bowl mix till it all comes together as a dough. Flour a surface and roll dough into a log, wrap in cling film and chill in the fridge for 1 an a half hours preheat the oven to gas mark 4 Lightly grease a baking sheet with butter. slice the log into thin discs and place the tray and cook for 7-10 minutes. leave to cool and enjoy!!!
