Ingredients

Serves: 6-8

Metric Cups
  • 2 large meringue nests (25cm wide and 2cm thick each)
  • 400 grams strawberries (fresh, without stems, thinly sliced)
  • 600 grams strawberries (fresh, without stems, whole - to deorate)
  • 500 millilitres whipping cream
  • 2 tablespoons sugar
  • 500 millilitres coconut (freshly grated)
  • 2 large meringue cookies (25cm wide and 2cm thick each)
  • 14 ounces strawberries (fresh, without stems, thinly sliced)
  • 21 ounces strawberries (fresh, without stems, whole - to deorate)
  • 17½ fluid ounces heavy cream
  • 2 tablespoons sugar
  • 2 cups coconut (freshly grated)

Method

  • Beat whipping cream until stiff peaks are formed, then slightly fold in the sugar.
  • In a bowl, mix the sliced strawberries into 1/3 of the whipped cream. Separate.
  • To assemble the dessert, layer in a dessert flat serving platter one meringue round, then top with the strawberry mixture. Repeat this procedure.
  • Cover the dessert all around with the 2/3 remainder of the whipped cream and top it off with the grated coconut.
  • Decorate with whole strawberries all around the edges. If desired, place on top 2 whole strawberries (with stems), sliced into a fan shape. Bon appetite!
