Sausage Casserole

Heat a good slosh of olive oil in a casserole on the stove top and add the onions and garlic (with a pinch of salt). Put the lid on and turn the heat down, stirring occasionally until the veggies are really soft and aromatic. Add the herbs and stir around. Add the other vegetables, and stir to coat with oil, allowing to cook gently for a few minutes. Remove the vegetables from the casserole, add a little more oil if needed and throw in the sausage meat, turning up the heat. Cook, stirring, until browned. Return the veg to the casserole with the brown rice and mix everything together. Pour over hot vegetable broth to just cover and add plenty of black pepper. Put in a preheated moderate oven (180 c ) and cook for about 40mins until everything is soft and the rice is cooked, then remove the lid and leave for another 15mins or so for some of the liquid to evaporate and the flavours to concentrate. Serve with greens.

- 1 chopped onion
- garlic (however much you like, chopped)
- herbs de provence (or any other dried or fresh woody herbs)
- 4 beef sausages
- chopped any vegetables (such as carrots, celery, peppers, parsnips etc)
- ½ cup brown rice
- vegetable broth
- black pepper
