Can I use frozen cocktail sausages for the Cosmo Cocktail Sausages and just cook them from frozen? Or do they need to be defrosted first?
Our answer
Nigella's Cosmo Cocktail Sausages are irresistibly sticky cocktail sausages that have been glazed with the flavours of a Cosmopolitan cocktail - cranberry, orange and lime. We assume that the frozen cocktail sausages are British-style pork cocktail sausages and not US cocktail-size wiener sausages.
It is probably possible to cook the sausages from frozen, as long as there is not too much ice or too many ice crystals on the sausages. Our preference would be to defrost the sausages in the fridge, if possible, as the main problem would be how much extra liquid comes from any ice. If they are defrosted then you could pat the sausages dry with kitchen paper before you put them into the roasting tin. However, if you have to use them from frozen then make sure that the roasting tin is not too deep so that any extra liquid will evaporate more easily in the hot oven. Cook the sausages as directed, but you may need to add an extra 5-10 minutes to the cooking time, or as long as is needed, to ensure that the sausages are coated in a sticky glaze. Also, make sure that the sausages are fully cooked though before serving them.
