Asked by Andersonfi. Answered on 2nd August 2019

Full question

Hi, I’d like to make the White Tiramisu without so much alcohol. Is it possible to use something non-alcoholic instead of the rum?

Our answer

Nigella's White Tiramisu (from HOW TO EAT) is a blonde version of the traditional tiramisu, using milk and white rum instead of the traditional coffee and dark rum. It is possbile to make the dessert without alcohol, if you prefer to avoid this.

If omitting the rum then replace it with 160ml/3/4 cup of extra milk and then add some extra flavour to the milk. If you want to retain the rum flavour then you could use a rum flavouring or essence instead. Unfortunately the strength of this particular ingredient varies according to brand, so we suggest adding 1/4-1/2 teaspoon and then tasting the milk mixture and adding more to taste. But read label carefully as some brands suggest onty using a few drops. Alternatively you could add vanilla extract and we would suggest adding 1 teaspoon of vanilla extract to the milk then tasting the mixture and adding more to taste.
