This is my family's favorite cookie recipe and perfect for when you have very little time or don't want to heat up the oven.

Metric Cups
  • 500 millilitres granulated sugar
  • 4 tablespoons cocoa
  • 1 stick butter
  • 125 millilitres milk
  • 250 millilitres peanut butter (smooth)
  • 1 teaspoon vanilla
  • 750 millilitres porridge oats (quick cooking)
  • 18 fluid ounces granulated sugar
  • 4 tablespoons unsweetened cocoa
  • 1 stick butter
  • 4 fluid ounces milk
  • 9 fluid ounces peanut butter (smooth)
  • 1 teaspoon vanilla
  • 26 fluid ounces quick-cooking oats (quick cooking)

Method

  • In a heavy saucepan on medium heat bring to a boil, the sugar, cocoa, butter and milk.
  • Let boil for 1 minute then take off heat and stir in peanut butter, vanilla and oatmeal. Return to heat for 30 seconds stirring constantly.
  • Then drop mixture by teaspoonfuls(or tablespoonfuls if greedy, as I am) on a sheet of waxed paper, or a sheet pan that's been oiled, and let rest until cooled and hardened.
