Heat up garlic clove in the olive oil for 30-seconds in the microwave. Discard the garlic and let cool the oil. Mix the vinegar and mustard with a small whisk until free of lumps. Stir in lemon juice concentrate. Add garlic-infused olive oil. Season with salt and pepper, and mix in your favourite salad.

I use this vinegraitte for almost any kind of salad greens mixed with half-moon sliced red onions and halved cherry tomatoes.
