I want to make the Lasagne Of Love for a crowd, but a number of them don’t eat beef but will eat chicken, pork or turkey. Would the recipe work with turkey mince only?

Nigella's Lasagne Of Love (from COOK, EAT, REPEAT) has a slowly cooked meat ragu that is made with a combination of beef and pork. We suspect that it would be possble to use minced turkey for the sauce, though we would suggest, if possible, using half turkey and half pork.
Minced (ground) turkey tends to have less fat than minced beef, so if you do use all turkey then try to get a combination of breast and thigh meat, as this will have better moisture and flavour. We would suggest adding an extra tablespoon of oil to the pan with the vegetables, or if you have the time and patience then you could brown the turkey meat in a separate frying pan first, with a couple of tablespoons of oil, and then deglaze the frying pan with some of the stock (broth) to maximise the flavour of the sauce. If you can't use beef stock then switch it for a good-quality vegetable stock instead.
